I’m happy to report that things are going much better now! My husband even pointed out that I seem happier and he noticed that I’m laughing again. Sadness and loss have been prominent in my family this year, and I realize we’re blessed and it could be so much worse. And, thankfully, it’s getting better.
The weather was super cold earlier this month, here in Wisconsin. It’s been a very mild winter overall with almost no snow to speak of! But, then it got really cold (like -30 with wind chill). Next week it’s supposed to be sunny and warm. I’m ready for the warm-up and for the snow to go away. In a way I feel like I was just waiting this winter out. Waiting for it to be over so I could resume life. I know that sounds extreme (and don’t get me wrong, it’s not like we weren’t living in the meantime). But, do you ever get like that? Just waiting for the sadness to pass, then along comes a bright, sunny day and things seem to brighten up.
Sunday was my husband’s birthday, so I made a fun no-bake ice cream cake which is 100% not on Nutrisystem! lol! But, it was SO super good, so I thought I’d tell you about it anyway. It’s ridiculously easy to make. It cost $4 for the whole cake (compared to a $30 Dairy Queen cake!) and nobody has to know what’s in it! (I know that’s hard to believe, but once it’s put together it just doesn’t seem like that’s what’s in it!)
That brings me to another point… I blog about great recipes quite often (you can find them all at GimmieRecipes.com. Between thinking about food, creating new dishes, and looking at pictures of recipes, it is REALLY hard to not EAT THEM!! The diet also changes the way food tastes (which actually is a good thing). I find I’m not craving fat processed foods.
And don’t even get me started about being my daughter’s girl scout leader. After all, it’s Girl Scout Cookie time!
I guess that’s the struggle of a skinny cook. ( Thankfully I have a ways to go before I’m there!) 😉
